This amazing vegetable filled vegan paella is loaded with tender vegetables, Spanish rice and spices and is perfect for large and small gatherings! Used three long thin red peppers rather than the red and green recommended, sliced them to look like squid rings which was visually very appealing.
Instructions to make Green Vegetable Paella π±πΏ:
- In a non-stick pan heat the oil and gently fry the chopped onion and shallot until translucent. Add finely chopped carrot and celery (soffrito) and chopped garlic and stir for a couple of minutes until just starting to brown. Add the turmeric and grated tomato, squash if using and stock and white wine bring to a simmer.
- Add the paella rice along the middle of the pan to sit just above the fluid level. Simmer until the rice is almost cooked. Add the veggies whilst there remains enough fluid in the pan to cook them. - Your paella is ready when the water is absorbed and you start to smell the pan is just starting to burn (thatβs the lovely crispy bits) Add the paella rice along the middle of the pan to sit just above the fluid level. We put in a chopped chilli as well which gave it some lovely heat. We used a paella dish with no lid so had to stir it and cook for a bit longer than stated but still worked really well. Add the onion, garlic, paprika, cayenne and saffron and season with salt. Stir in the rice, chilli flakes and paprika, cook for a further minute, then add the stock and tomatoes.
