- Make ready 1 x 340g tin sweetcorn
- Get Handful fresh coriander
- Take 1/4 Red onion
- Get 2 tbsp Plain flour
- Prepare 1/2 tsp paprika

- Get 1/2 tsp olive oil

- Get Juice from half a small Lime
- Prepare Greek yoghurt

- Finely chop the red onion and coriander (leaving some coriander for garnish)
- Scoop out half the tin of sweetcorn and put aside.
- Blend the remaining half of the sweetcorn, the onion, coriander, flour, paprika, egg, olive oil and lime juice together until mixed but still chunky.
- Stir in the remaining sweetcorn you set aside, until the mixture is a batter consistency. Add water or flour if needed.
- Heat a frying pan with a splash of oil on medium heat and spoon the fritter mixture in to make patties.
- Fry until golden brown on each side and cooked throughout, about 5 minutes.
- Serve with plenty of Greek yoghurt, toasted nuts and seeds and fresh coriander.
