Instructions to make Avocado mousse:
- Prep the fruit and blend the suger..(used about 3/4 of this,or 1 cup)
- In a medium bowl add the avocs,the cream cheese(optional),the blended and seived suger,bit of lemony herbs(Not too much to make bitter,).mash in to combine briefly
- Place in blender.in same bowl.separate the 2 egg whites and add in the blender.this will help ease blending with our add in milk, etc
- Add in bit.more of thr suger in blender as required sweetness..then blend while stiring in between.with a spoon or fork so that all blends well….Place in a glass bowl which will fit over a pan of boiling water with the base of dish just above the pan(See pic).keep stirring and try not to let boil.just as heated thru…remove from cooker.abd let the gentle heat just cook the whites to remove rawnes
- Please don't overcook at this stage as will make it sticky and heavy…just whisk gently to distribute heat…Then place in serving glasses and garnish with the zesty herbs you are using…cover pots/serving cups with cling film and chill in fridge for about an hour or so before serving (or overnight if its better).
