- Pétrir 10min sur la table. Knead 10min. On a hard surface.
- Laisser reposer 1h la pâte en boule sur le comptoir. Rest the dough about 1hour.
- Repétrir 2min et former en pain. Placer le pain sur le papier parchemin. Knead again 2min and form a bread. Put the ciabatta on a parchment paper.
- 45 min de repos. Rest for 45min to double the volume of the dough.
- Cuire 32 min à 425°F avec plat d'eau sous le pain = croute croustillante. Bake 32min at 475°F and put a bowl with water in the oven under the bread to make a crunchy crust.
- Laisser refroidir 1 nuit à température pièce. Cool 1 night before serving.
