- Take For Kachori ::
- Get 2 cup maida

- Prepare 3/4 tsp or to taste salt
- Take 1 tsp or to taste red chilli powder
- Get 1 tbsp coarse fennel
- Make ready 1/4 tsp asafoetida normal
- Prepare 1/8 tsp special desi asafoetida
Instructions to make Besan Hing Kachori:
- For Kachori ::
- Take mixing bowl. Add maida, semolina, salt & desi ghee. Mix well.
- Add lukewarm water gratudly as per required. Knead the Kachori dough & make semy tight dough.
- Add one tsp oil and knead again for a minute. Cover the dough with wet kitchen towel. Keep aside to rest for 15 minutes.
- For Stuffing ::
- On medium flame heat desi ghee in a wok, adding the besan & mix well. Stir continuously, roasted it till turns light golden. Turn off the gas.
- Put in a bowl & combine all ingredients of Stuffing. Mix nicely and keep aside.
- Now, for make Kachori again knead the dough for a minute. Make small ball in equal pieces. Now make Peda's shape. Apply same method to all.
- Now roll all Peda's & make small size Puri/Golgappe. Take a one small puri in the palm then with help of thumb and finger make thin the edges all the sides.
- Now 1 tsp Stuffing fill in the middle of puri. Press the Stuffing lightly and close all the edges carefully. Apply same Process to make all Kachori.
- Press lightly & roll again to make Kachoris.
- On medium flame heat the oil in a wok. On medium to low flame slide the kachori one by one to oil. After few seconds cook one side & pop up reduced the flame.
- Now flip with ladle one by one. On low flame cook & deep frying until it turns golden all the sides. Switch off the flame. Take them out on absorbent sheet.
- Now ready to serve or stored in airtight container. Enjoy !!
