The ingredients needed to make Baileys And Syrup Waffle Cheesecake:
- Prepare 2 packages Philadelphia cream cheese
- Get 1 packages Cream (or ricotta, to taste)

- Get 1 packages Syrup waffles
Make crust: In a food processor, blend Oreos with melted butter and salt. Pat into a springform pan and set aside while you make filling. Parties require nibbles and drinks, all the better if they are alcoholic….the food AND the drinks that is. This Baileys cheesecake fits the bill perfectly, it is rich and creamy with a nice hit of Baileys Irish cream in both the velvety cheesecake and in the rich chocolate ganache topping; the ginger biscuit base provides a lovely contrast of texture and a hint of ginger.
Instructions to make Baileys And Syrup Waffle Cheesecake:
- Melt the butter and crush at least half the package worth of cookies.
- Mix the two up, but be careful not to burn your butter!
- Stick this mix in a baking tin, be sure you covered the whole surface. Leave in the fridge for at least 30 minutes.
- Mix the ricotta or cream with the cream cheese. - (Mascarpone is also an option. It depends on how you like the texture of your cheesecake. Ricotta and mascarpone will create a thicker, more quark like filling)
- Add your dash of baileys to taste. I did not add sugar to this recipe, because to me, baileys is sweet enough already, especially combined with the base of syrup waffles!
- When you've checked your base, add up the cream cheese mixture in your baking tin, and leave it there for at least 1,5 hour.
Open the lid and remove the waffle with a fork. The cheesecake will be tender, so you may have to remove the waffle a quarter at a time. Top warm waffled cheesecake with powdered sugar and your choice of toppings. I suggest any of these: salted caramel sauce, lemon curd, chocolate syrup, whipped cream, fresh strawberries. Repeat with remaining batter (see note).
