- Get 3-4 bitter gourd sliced
- Make ready 1 sweet potato sliced

It's a Bengali Mixed vegetarian dish comprising of several veggies inclusive of Bitter Guard, Eggplant, Green Banana, Potato, Sweet potato, Drumsticks, White radish and Hyacinth Beans. Shukto which people from opar bangla or Bangladesh call shuktoni is actually the result of Portuguese influence from colonization in the pre British era when the use of milk in a savory vegetable dish was tried. The fried lentil dumplings or bori is another delightful part of Shukto which adds a nice bite to the dish.
Instructions to make Doodh sukto:
- Heat a wok add oil and tamper the red chilli and celery seeds
- Now add the bitter gourd and fry well adding salt and turmeric powder
- Add all the veggies and saute well.
- Cover it and stir it ocationaly
- Add milk,sugar and mix.allow it to boil.
- Switch off the heat and enjoy the soothing cirry
A Bengali lunch can be complete without the shukto. Shukto is a vegetarian preparation with loads of vegetable, and for a change its among the very few dishes which require minimal quantity of oil and spices. I have slowly started liking shukto these days. My dear daughter has also started liking the taste and flavor but, she always takes out the bitter gourd pieces from it and eats rest of the veggies.
