I like to make this with whole duck as well but as I had four duck legs on hand, I decided to use them this time. With coconut cream, turmeric, and garam masala, this dish has an exotic and satisfying spicy flavor.

- Add 1:1 light soya and dark soya, enough that the duck is lightly dipping in it's marinade. Add the garam masala and a grainy paste of garlic ginger and the chillies.
- Marinade for 1-2 hours, or overnight.
- In a non stick pan, add soyabean oil and fry the onions till brown. Keep them separately.
- Heat some more oil and add the duck with it's marinade and the onions. Add the cinnamon. Cover it and let it cook (add some water if required)for 40 minutes on sim flame. Check if it's soft.
- Now remove the lid, add a tbsp of sugar and reduce the juices to a thick consistency. Add a chopped chilli separately if u like the look of green chilli and some spiciness.
You'll be amazed that something so tasty could be so quick and simple. Serve with cauliflower rice and you have a winning low-carb take on a classic Indian dish. Score criss-crossed lines into the duck skin, then rub in the garam masala and ginger. Pour off the excess fat halfway through. Place tomato sauce, garlic, garam masala, paprika, turmeric, and salt in the pot; stir until well combined.
