Instructions to make Yam & sardine stew:
- Peel, wash, put the yam in a pot, add salt & cook the yam. Strain & set aside when cooked
- Add both palm oil & veg. Oil in a pot, pour in the blended pepper & onion. Fry
- Add the sachet tomato, crayfish, seasoning cubes, sardine. Stir. Allow for 5mins.
- Now add the spinach. Stir & serve
It is rough and scaly and very low in beta carotene. Depending on the variety, sweetpotato flesh can vary from white to orange and even purple.
