My go-to recipe for when i get home super-hungry. Bring a large pot of salted water to a boil. Rinse the noodles under cold running water to halt the cooking, then drain and transfer to a large mixing bowl.

- Take 1 tbsp olive oil/ coconut oil
- Prepare 4 spring onions, chopped
- Get 2-5 cm chunk of ginger(depending on how you feel about ginger), peeled and grated/ finely chopped
- Prepare 1-2 handfuls shitake mushroom, sliced or torn
- Make ready 100-150 g firm tofu, pressed and drained and cut into cubes
- Get 2-3 tbsp sesame seeds
- Make ready 750 ml hot water
- Take 2-3 tbsp white miso paste
- Prepare 1-2 heads tatsoi or komatsuna or pak choi, torn into small pieces
- Take Some shichimi if you have some or chill flakes - optional
- Make ready Enough soba for two
It's about time we let the fruits and veggies take the lead here. Then take a block of tofu and squeeze some of the water out so it can absorb flavours better. Cut the tofu block into small cubes and put them into a bowl. Add the cooked chickpea noodles and sauce mixture, folding gently to combine.
Instructions to make 10 minute soba special - vegan:
- Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.
- In a jug, mix the miso and water until the miso is dissolved.
- Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.
- Add the mushrooms and sauté for 2-3 mins.
- Add the tofu and sesame seeds. Sauté for 1-2 mins.
- Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.
- You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
