- Prepare 250 gm cuttlefish(cut into small pieces

Hot butter cuttlefish or calamari as some of us may know it, is every spicy loving oily food junky's piece of heaven - or should I say, pieces of heaven. It is spicy with just the right amount of sweetness, thick crunchy batter providing plenty of texture and soft juicy morsels of cuttlefish underneath. Stir it twice then add the sugar, chili paste and finally the cuttlefish.
Steps to make Butter Cuttlefish:
- Add salt, turneric powder,red chilli powder,1/2 tsp black pepper powder to cuttlefish. Add egg white to it. Keep aside. Mix cornflour, flour,salt,1/2 tsp black pepper powder together. Coat each cuttlefish with this mixture. Deep fry into oil and keep aside.
- Add butter to another pan. Add onion, garlic and green chillies. Saute for 2 minutes. Add fried cuttlefish into it and Saute for another 2 minutes. Add rest of the black pepper powder and black salt. Serve hot.
Tip: Hot butter cuttlefish obviously requires to be cooked in butter. However adding butter into a fiery hot wok will only result in burnt butter. This is the reason why a spoonful of oil is added together in order to prevent the butter from burning. Butter for flavor, oil to prevent the butter from burning is always a golden rule. Coat marinated Cuttlefish in above dry flour mix and fold it for few seconds.
