- Beat the eggs and coat the cod with the flour
- Chop the onion, red and green peppers.
- In a hot pan with a little olive oil fry the tomato around 5 minutes, then add the veggies and fry 10 minutes more, do not use fried tomato cause the recipe will get too oily. Keep moving the mix frequently to avoid burning it.
- In a separate pan fry the cod with olive oil till it gets crispy. Around 5 minutes
- Add the salt, pepper and seasoning to the tomato as you like.
- Add the cod to the tomato sauce and cook it together for another 5 minutes.
- Serve accompanied with bread, it's delicious to deep it in the sauce!!!
