- Oil a baking tray and line with cling film or baking paper. A smaller tray will give deeper fudge squares. Grate chocolate.
- Place evaporated milk, sugar, butter and marshmallows into a pan and melt gently over a low heat. Stir frequently. Once melted bring to the boil for about 5 minutes. Stir to avoid burning.
- Remove pan from the heat and add the grated chocolate. Leave for 30-60 seconds and then fold in gently until all combined. Add dried cranberries and then pour mixture into the prepared baking tray.
- Leave to set for 2-3 hour or overnight. Cut into squares or preferred shape. Serve or store in an airtight container.
