You can top your yogurt or cottage cheese with the muesli mix like granola. You can add muesli to a simmering liquid for a warm breakfast (making a mental note for this fall!).

- Preheat the oven to 160°C.
- Melt Coconut Oil and mash the ripe Bananas very well. The sweetness comes from the Bananas, but you may wish to add 1 to 2 tablespoons Honey for extra sweetness.
- Combine Oil, Bananas (and Honey), then add Rolled Oats and mix well.
- Turn out the mixture onto a baking tray and bake for about 40 to 50 minutes or until the mixture is light brown and toasty. *Important: You need to stir and turn the mixture several times for even colour and to make sure the mixture is cooking evenly.
- Roughly chop the nuts and dried fruit if they are large.
- Remove the mixture from the oven and add the other ingredients, and mix evenly.
- Let cool before enjoying. It is so nice with unsweetened fresh yoghurt and fruit.
Changes include: adding a method to make clumpy granola without adding more sweetener or fat, for the loose granola, adding the dried fruit at the end which ensures none of it burns (sometimes, some fruit on the surface can get a little too brown). The Granola will be closer to the heating source of your Oven, allowing it to crisp up and cook faster. A Silicone Mat takes things to the next level! I use my reusable Silicone Mats all the time in my Baking, but I especially love to use them for Granola. Parchment Paper tends to get soggy, but these mats help keep my crunchy clusters looking.
