Instructions to make Marghi Special:
- Wash and cut the fish into pieces
- Wash and cut the leaves
- Fry the puree and some of the onions
- Add the fish and cover to cook on low heat
- After about 5 minutes, add your freshly ground scotch bonnet and garlic and add. Also add the seasoning and spices at this stage
- Continue to fry the the puree on low heat. Remember no water.
- Next add leaves on top and the remaining of the chopped onions. Cover so that the leaves will shrink them mix up the sauce with the veggies.
- Cook on very low heat for more minutes. Voila! It's ready. I served mine with Rice pancakes
