Vanilla slice is a type of pastry. - Get 3 frozen puff pastry sheets
- Take Vanilla Custard:

- Get 120 g caster sugar
- Take 40 g corn starch
- Make ready 6 egg yolks
- Take Icing sugar for dusting
If you want the taste without the hassle of making custard from scratch, this easy slice recipe is for you.. I did add a very thin smearing of butter/cream cheese/a touch of sweetener blend after the vanilla slice was in the fridge overnight. Line two baking trays with baking paper and lay the pastry sheets on top, then place another baking tray on top to prevent pastry rising too much during baking. These are the vanilla version of my Chocolate Custard Slice and a more, what you would find in a bakery, type dessert than my No Bake Vanilla Custard Slice.
Steps to make My Version of Vanilla Slice:
- Bake 3 pastry sheets 200C for 10 minutes of until cooked. Set aside to cool.
- Bring milk, cream, butter and vanilla paste to the simmer.
- In a separate bowl, whisk sugar, corn starch and egg yolk together.
- When the milk mixture reach to 60C, put 1/3 cup milk into the egg yolk mixture. Whisk until combine and put the whole mixture into the milk mixture.
- Return to a pan and cook for 4 - 5 in medium heat.
- Put into a big bowl and cover with cling wrap attach to the custard.
- Let it rest until completely cool.
- Assemble the Vanilla slice dusting with icing sugar.
- Put in the fridge at least 3-4 hours or overnight before you cut and serve with fresh berries or ice cream.

Line a square high-sided tin with baking paper so it overhangs (so it's easy to get the slice out). Place the pastry on the bottom so it fits firmly (you may have to gently trim). My original version uses sheets of puff pastry for the top and bottom of the slice, while my new version uses lattice biscuits. That means this recipe now involves absolutely no cooking or baking. I have been making my usual Easy Vanilla Slice for years, but I thought it was time to make it an even easier recipe.
