Steps to make Butter chicken:
- Chop the chicken into chunks
- Add the garlic, ginger, paprika and a touch of salt. Marinate and leave for 15 mins.
- Add oil to a pan and cook the chicken. Once cooked, transfer the chicken into a bowl for later.
- To make the sauce finely chop the onion and add to a pan. Add oil and tsp of butter. Lightly sweat the onions.
- Add the chopped tomatoes and cashew nuts. Once mixed add water, malt vinegar, sugar, garam masala and red chilli powder.
- Lightly simmer for 15 mins.
- Pour the sauce into a blender
- Transfer the sauce into a pan using a sieve as the sauce needs to be smooth.
- Mix in the butter and cream. Also add the chicken and fenugreek. Let it simmer through
- Plate up with rice 🍚 and add a touch of cream to finesse.
