The ingredients needed to make Mutton Biryani:
- Get 630 gm Mutton Mix Boti
- Take 2 Tbsp Coriander Seeds
- Prepare 1 Tsp Fennel Seeds
- Get 1 Tsp Cumin Seeds
- Prepare 1 Tsp Black PepperCorns
- Get 3-4 Green Cardomom
- Prepare 1 Black Cardamom
- Get 3-4 Cloves
- Make ready 2 Blades Mace
- Get 1/4 Piece Nutmeg
- Make ready 1 Star Anise
- Prepare 1 Cinnamon
- Take 9-10 Button Red Chilli
- Prepare 3/4 Cup Cooking Oil
- Prepare 2 Tbsp Ginger Garlic Paste
- Take As Required Water
- Get 1 Tsp Salt
- Get 1 Tsp Turmeric Powder
- Take 1 Cup Yoghurt
- Make ready 1 Tbsp Red Chilli Powder
- Get 250 gm Potatoes (Boiled with Yellow Food Colour)
- Get 750 gm Rice (3/4 Boiled with Salt)
- Take 1/2 Tsp Yellow Food Colour
- Take 2 Tbsp Water
- Get 2 Tbsp Lemon Juice
Irrespective of the method used to prepare his delicacy, Mutton Biryani is a regal dish straight from the lands of the Nizams. The marination time of mutton can also vary in all these methods, which directly impacts the tenderness and the flavour of the meat. If you have a lot of portion, heat only the amount you want to serve. You can even freeze Biryani for about a month.
Steps to make Mutton Biryani:
- In a Pan add Cumin Seeds, Star Anise, Nutmeg, Mace, Cinnamon, Green Cardamom, Cloves, Black Cardamom, Coriander Seeds, Black PepperCorns, and Fennel Seeds. Dry Roast until Fragrant.
- Let it Cool.
- Now Grind to make a Course Powder.
- Add Oil in a Pot. Add Mutton and Ginger Garlic Paste. Mix until Changes Colour.
- Add Water, Turmeric Powder and Salt. Mix and Bring it to a Boil.
- Cover and Cook on Medium Flame until Tender. (40-45 minutes).
- Uncover and Cook without Mixing until Oil Separates.
- In a Bowl add Yoghurt and Whisk for 1 Minute.
- Add the Yoghurt in the Mutton Mixture and Mix.
- Add Grinded Spices and Red Chilli Powder. Mix and Cook for 4-5 Minutes.
- Add Potatoes and Mix. Take of Pot from the Flame.
- Add Rice in a Pot. Save some for later. On Top of the Rice add Mutton Mixture. Save some for later. Now Add the saved Rice on Top. Save some for later. Now ddd the Saved Mutton Mixture on Top. Add the Rice on Top Now.
- Mix Food Colour with Water. Add it on top of the Rice. Add Lemon Juice on top of the Rice as Well.
- Cover and Steam. Cook on Low Flame for 8-10 Minutes.
- Turn off the Flame and Serve Yummy and Delicious Mutton Biryani.
- Enjoy your meal.
Just let it cool down completely before freezing. Thaw it overnight and heat it again, before serving.
