- Heat the oil in a large saucepan. Sauté the onion, carrot and celery over a medium heat until softened and lightly golden. - - Stir the Thyme leaves and Bay leaf into the lentils and then add the red wine. - - Simmer until the wine has almost been fully absorbed.
- Add the chopped tomatoes and Worcestershire sauce.
- Add 1/2 l of stock and bring to the boil and then simmer, (adding more stock or boiling water as needed), for approx 30 minutes or until the lentils have absorbed most of the stock and have softened but still have a slight "bite", leaving a slight sauce.
- While the lentils are cooking, boil the potatoes until soft, drain, mash and add the garlic oil, some salt and ground white pepper and mash until smooth.
- Heat the grill to high.
- Season the lentils with salt to your taste. - - Remove the Bay leaf. - Pile the lentils into a small / medium casserole and cover with the garlic mash. - - Sprinkle with the cheese and heat under the grill until bubbling and browned.
- Serve with any vegetables you like. - - Enjoy.
