  3. Add the cooked cous cous to the veg and load the tomatoes adding in grated cheese as you go. Cover in oil and put in a preheated oven at 180 degrees for 40 minutes.
  4. Remove from the oven and serve with veg chips and basil.

The tomatoes were given to me from my husband's mother who lives near the farm. Using a small spoon, scoop out insides, then place tomatoes upside-down on a paper towel. Halve the tomatoes and put in one layer in a shallow ovenproof dish. Spread each cut side with a little mustard, then sprinkle a little of the crumb mix on the top. Toss the rice with the reserved tomato juice and pulp.
