If you find it's still too dry, or that the patties won't hold shape, I recommend adding a splash of red wine, or whisking an egg, and adding it spoon at a time, mixing in until the texture is. The great thing with adding Simon Howie haggis to the mix is the seasoning is done by the haggis and gives the burger an amazing flavour while also helping to hold in the moisture.
