Egg kurma is a easy Indian food recipe that is prepared with boiled eggs, onions, tomatoes and spices like poppy seeds, coconut and whole garam masala. The combination of heady spices, fresh mint and coconut sauteed along with the onion-tomato base gives the egg kurma its unique flavor that is. Steps to make Egg Kurma / Egg curry / Egg Gravy:
- Slit the boiled eggs on 3 sides.
- Place a fry pan on the stove. Switch on the flame. Pour 1/2 tsp Oil, turmeric powder,1/4 tsp Chilli powder and little salt. Add the eggs and saute on a medium flame for 2 mins.
- In a currypan add 3 tsp Oil. Once the oil gets heat add cinnamon, cardamom,cloves and cumin seeds. Fry for a minute.
- Add the onions fry until onions becomes translucent. Then add ginger garlic paste and saute for 2 mins in medium flame.
- Add 1/2 tsp turmeric powder, 1 tsp chilli powder, coriander powder and garam masala. Saute for a minute.
- Then add chopped tomatoes and saute for 2 minutes in medium flame.
- Add required water. Cover and cook for 10 mins.
- Meanwhile grind the coconut to a smooth paste. Then add the paste to the curry. Cover and cook for about 5 mins.
- Then add the fried eggs and mix well.
- Garnish with coriander leaves and serve hot.
- Serve with Chapathi and Roti.
