Indian style potato curry is a delicious dish that is perfect for dinners at home or to bring to a party. I use potatoes all the time in my kitchen whether it is to make simple stir fry or my favorite aloo paratha. This time around I used them to make this Vegan Potato Curry in my Instant Pot! This Potato Curry recipe aka Aloo Bhujia is the best friend to your naan or steamed rice!
Instructions to make Potato Curry:
- Wash and cut the potatoes as Cubes.
- Grind the coconut and fennel seeds to a fine paste.
- Heat oil in a Pressure cooker, add in the Cumin seeds, Curry leaves, onions and ginger garlic paste and saute for 1minute.
- Then add the chopped tomatoes and salt. Saute well.
- Further add in the spice powders (red chilli powder, coriander powder, turmeric powder). Mix well. cook till the Tomatoes are mushy
- Now add potatoes and saute well.
- Then add the grounded masala, enough water for the Curry.
- Check for salt and spice. Add the chopped coriander leaves. Cover the pressure cooker and cook for 3 whistles.
- After 3 whistles, open the pressure cooker and sprinkle some more chopped coriander leaves.
- Potato Curry is ready to serve.
