- Heat the oil on a medium heat in a frying pan.
- Fry the burgers for approximately 5 minutes on each side, until they are nicely browned.
- Layer the burgers in the baps with mixed leaves and tomato slices.
Trim the ends of the courgette, slice in half lengthways and then in half across. These courgette burgers pair grated courgette with feta cheese, red onion, lemon and fresh herbs. They are baked, not fried, so are extra light and healthy. Sandwich in a veggie burger or serve the cooled patties as part of a Greek meze. I really, really like courgettes (zucchini!).
