- Take 500 g mutton or lamb
- Make ready 500 g sliced onions
- Prepare 1 tbsp ginger paste
- Make ready 1 tbsp garlic paste
- Take 3 dry red chillies
- Prepare 2 cinnamon sticks
- Prepare 1 tsp turmeric
- Make ready 1/2 coriander powder
- Prepare to taste Salt
- Take 6 cloves

- Take 2 bay leaves
- Make ready 3-4 tbsp Oil
- Make ready 1/2 tsp kashmiri red chilli powder(mainly for red colour)
- Get 1/2 tsp fennnel powder
- Take 400 ml Water
- Prepare 1/2 tsp fenugreek seeds
- Make ready 1/2 tsp garam masala
- Take Fresh chopped coriander to garnish
Instructions to make Mutton Rogan Josh

- Place a pot on the gas cooker. Put oil in to the pot, let the oil heat up. Add bay leaves, cardamom, fenugreek seeds and cinnamon stick. Cook them for 1 min till the dry spices start to release their aroma.
- Add onions, cook them until golden brown. Add ginger and garlic paste. Cook it for another min. Add dry chillies, turmeric,coriander powder and salt. Cook the spices for 2 mins on low heat. Add little bit of water in to the Kashmiri red powder and add in to the masala.
- Add mutton and cook it for 15 mins, every after 15 mins keep checking it. Add fennel powder, plain yogurt. Give it stir so all the masala get coated very well on the mutton. Add 400ml water and let it simmer. Cook it for another 15 mins. Give a stir. Keep repeating the same process for 3-4 times.
- Cook it for another 20-30 mins on low heat until the mutton is soft and tender and the gravy is rich in flavour and colour.
- Garnish with fresh chopped coriander and garam masala. Serve with fresh naan bread or rice.
