- Clean and blanch Spinach for 50 seconds. And put it in chilled iced water.
- Make a fine paste of Ginger and green chilli. Also once spinach gets cool completely, make a fine puree of it too.
- Now heat butter and oil together. Add Cumin Seeds, turmeric, Ciba Hing and Garlic Chilli Paste. Cook it till it sees little pinkish brown.
- Turn off the heat and pour spinach puree in. And mix it well. Keep it aside.
- Now chop cottage cheese into small cubes and shallow fry it on the pan till it gets the golden texture. Sprinkle some salt and pepper and toss it.
- Now take spinach mixture again on heat once it cools down. These will help it to keep its nice green colour. Heat it till it gets the first boil.
- Then add cottage cheese, fresh cream, 1 tsp of sugar, ciba meat masala (for its nice flavour) and salt. Stir it. And let it cook for another 4-5 mins. Do not keep lid at any point.
- Our palak paneer is ready now. Serve it with some cream garnish and potato crispies.
