- Take 2 Cloves
- Get 1 Bay leaf
- Take 1 Cinnamon stick
- Take 1/2 tsp Garam masala powder
- Prepare 1/2 tsp Ghee or clarified butter
- Prepare 1 cup White oil
- Take 2 tsp Sugar
- Get to taste Salt

- Now make medium sized balls from chhana and put 2 raisins into it. Heat the oil and fry all balls in the heated oil. Do not overcrowd the pan.
- When it will golden brown in colour, take it out from oil and soak the extra oil on paper towel or napkin.
- Now prepare the gravy. Heat some oil and put all whole garam masala into it. After crackling garam masala, put ginger-chilli paste and mixed it well. After 2-3 mins add cumin powder, coriander powder, turmeric powder, kashmiri red chilli powder, salt and sugar. Mixed it all together.
- After 3-4 mins add cashew-melon seeds paste and mixed it well. Cook it until oil is oozes out.
- When oil is getting separated add fresh chhana water or normal water. Cook it for 5-6 mins. Now put the balls into gravy and cook it for 7-8 mins. Do not cover with lid.
- Add garam masala powder, ghee and cook it for 2 mins. Fresh Chhana Kofta is ready to be served. Served with puri, roti or naan.
I grew up having this special chhanar dalna by Maa and always it was made from homemade paneer. You get soft, juicy melt-in-mouth chhanar/paneer koftas and the curry tasted out of the world that too with the minimum use of spices.
