The ingredients needed to make Crispy Falafel:
- Prepare 300 g dried chickpeas
- Take 1 medium red onion, chopped
- Get 4 cloves garlic,
- Take 1 tsp cumin
- Prepare 1/2 tsp salt
- Take 1/2 tsp ground black pepper
- Prepare 30 g parsley, roughly chopped
- Take 3 tbsp flour (or chickpea/gram flour if gluten free)
Steps to make Crispy Falafel:

- Soak chickpeas in large amount of water overnight. - 2. Next evening, drain and rinse chickpeas and place everything in food processor. - 3. Blend until it resembles breadcrumbs, then tip in to large bowl and refrigerate for at least 1 hour.

- When ready to cook, take bowl out of fridge. - 5. Use a wide bottom pan and fill with around 1cm oil and place over a medium heat. - 6. Take a golf ball sized amount of falafel mix, and form in to a patty, almost like a burger. This allows you to use less oil. - 7. Fry in oil until golden brown and then turn over. Once cooked, place on a plate lined with kitchen towel. - 8. If the falafel are fragile and don't stay together well, add 1 tbsp flour at a time until the mixture binds.
