Add the bamboo shoots and bring back to a boil. Taste the curry. it should have a slightly sweet taste, a little bit spicy. DIRECTIONS Stir in the red curry paste. Add the rest of the coconut milk, water, bamboo shoots, sugar, and fish sauce and return to a boil.

- Soak the ingredients of mustard paste for 30 minutes in lukewarm water.
- Grind the soaked ingredients of mustard paste by adding required amount of water to a fine paste.
- Keep immediately in refrigerator to avoid the pungent smell and taste of mustard paste. You can store in refrigerator for further use.
- Take the chopped veggies in a microwave oven safe bowl. Mix 2 drops of refined cooking oil, 1/2 tsp turmeric powder and a pinch salt, 3 tsp mustard paste very well and cook in the microwave oven for 5-6 minutes to have tender veggies.
- Heat mustard oil in a wok. Add hing powder and panch phutan seeds to crackle.
- Now add chopped garlic and sauté for 1 min in low medium flame.

- Add water to make the gravy. Put the veggies. Mix well. Cover and cook for 2 mins in low medium flame.
