Melt the chocolate, golden syrup and butter in a bowl set over a saucepan of gently simmering water (do not let the base of the bowl touch. Melt the milk chocolate, golden syrup and butter in a small glass bowl over a saucepan of gently simmering water. Add some cupcake cases to a muffin tray. Melt the chocolate, syrup and butter together.

- Butter the filo pastry sheets one by one.
- Place a kneeting needle on the smallest side of the filo sheet.

- Boil the ingredients for the syrup for about 5 minutes and then pour over the nests when they cool a bit. When they cool completely, fill half of them with the ganache and the rest with the white chocolate.
