- Get Just mix all things together and cook it for 2-4 minutes
- Prepare For sugar syrup
- Take 1 cup sugar
- Prepare 3/4 cup water
- Make ready 2 lemon slices
- Get 1 tsp rose water
Qatayef are stuffed Arabic pancakes with lots of varieties and fillings. Atayef are Middle-Eastern Pancakes stuffed with a ricotta cream, sprinkled with crushed pistachios and served with a rose-water simple syrup. Atayef (kataif or قطايف) are thin and lacy stuffed Arabic pancakes. You can still make the atayef without stuffing them.
Steps to make Arabic qatayef(atayef):
- Take All purpose flour,semolina, milk powder, sugar,yeast in a bowl and whisk it well
- Now add water in it and make a smooth paste.cover it with plastic wrap and let it sit for 30 minutes.
- After 30 minutes it will rise remove plastic wrap and mix it well again.better to blend it in a blender.
- Now take 1scoop of better and add in a non stick pan.when bubbles starts remove it from pan and cover with any towel or cloth.make 15 small qateyef with this better.
- For filling.take 1cup milk,add custard powder,corn flour and mix it let this mixture to boil.then add sugar in it and cook it untill it becomes thick in consistency.as shown in picture.
- Now add custard filling in white side of qatayef and brown side should be out. close it half with the help of fingers.as shown in picture.
- Repeat with all.
- You can also used whipped cream or hanged cheese along with thick cream.chopped walnuts and pistachios also use for filling…
- Make sugar syrup. add 1/2 cup of sugar and 3/4 cup water in pan bring it to boil then add 2 lemon slice and 1tbsp of rose water in it.when it becomes thick in consistency.remove it from flame.
- Add sugar syrup on the top while serving…. sprinkle chopped pistachios..
