Steps to make Instant Jalebi:
- Add 1 cup sugar and 1/4 cup water in a sauce pan and bring to it a boil.
- Keep on boiling it till you get 1/2 tar consistency. (Sugar syrup should not be very thick otherwise jalebis will not soak syrup).
- In a mixing bowl, add maida, corn flour, curd, food color and mix well.
- Slowly add water to make a medium consistency batter (neither too thick nor too flowy).
- Keep on mixing the batter in round circular directions rigorously for 4 minutes or until it forms into a smooth batter.
- Now add baking soda and give a gentle mix.
- Now pour this batter in the tomato ketchup bottles carefully with the help of a funnel or by hands.
- Heat oil in a pan (DO NOT add much of oil as we just need to shallow fry them)
- Squeeze the bottle and make round spirals and end it with a line in the center it connects spirals together with the batter.
- When one side is partly cooked, turn over and fry the other side.
- Fry till the jalebis are a light golden.
- Immediately drop the fried jalebis in the warm sugar syrup for 30 seconds. (sugar syrup must be hot if need be hot it again)
- Serve jalebis hot, warm or at room temperature.
